Let Them Eat Cake!

With our 1 year anniversary approaching (it's Sunday!) we needed the top tier of our wedding cake here in Phoenix. When we moved here there was no way we could drive the cake from Indiana in a Budget Truck because it wouldn't stay frozen, so my mom said she would take it home, freeze it and then mail it to ice with dry ice when the time came. Here are pictures of our cake from our wedding day. In the second picture you can really see the top tier.



Well, mom could not find dry ice ANYWHERE! She put the cake inside a small box and then inside of a styrofoam cooler, filled it with frozen cold packs, boxed it in another box, and overnighted it to me. The box was stuffed with clothing and the cake fit into the cooler PERFECTLY so that there would be little room to move around. The box was stamped fragile. Here is what arrived:


A complete MESS! I was heartbroken. Sigh. The good news is, it smells fabulous and we are still going to eat some of it on Sunday. We put it in the fridge and are hoping the flavor is still good.
Note: Don't overnight a cake with frozen ice packs!

Just use a spoon and add some ice cream and you will be set!! The pics of the before cake are awesome!
